.... Just right!

In the Show Time  post I promised to get back to you about the cupcake, or patty cake, recipe I was going to try from The Country Show Cook Book. As mentioned finding a good old patty cake recipe had been proving difficult – many tried were too rich, others too dry, others too sweet. Well I am happy to report that the reason this recipe by Yvonne Maslin has won so many awards over the last 28 years was clear – they were perfect and totally simple!

….well except that I over filled the patty tins – when Yvonne says fill each only to 2/3rds – she is absolutely right. It just didn’t look enough with the first batch so I had to watch them rise beautifully and keep on rising and spreading out over the tin… oops. See the photographs above so you can avoid making the same mistake. Try to get a copy of this book – it really is lovely…of course some of the recipes are very old fashioned nanna recipes or rather kooky ones I’d never make [eg the licorice allsort slice - sorry Robyn from Parkes]  - but the hundreds of lovely recipes make it an all round fabulous buy for all cooks [published by New Holland for the Agricultural Societies Council www.newholland.com.au] .

Meanwhile If you are looking for things to do with the kids over the last few days of the holidays have a cup cake afternoon! Get inspired with these images from our Girls Only Cupcake class this week at the store. We had great fun making an impressive mess along with some crazy, pretty, funny and wildly colourful cakes! These cakes were lovely plain so they are a good option for the lunch boxes next week [sorry to remind you] – make a big batch and freeze them. I suspect they would be great with some sultanas…
